Baihao Yinzhen (白毫銀針), which when translated means "White Hair silver needles," is produced in Jinggu, Yunnan province of China. Amongst white teas, this is the most expensive variety and the most prized, as only top buds (leaf shoots) are used to produce the tea. Reserved for the Chinese Imperial family for centuries, this tea is reverently hand- harvested only for a few days in early spring. The fragrance is light, akin to freshly bloomed flowers. The flavor is more juicy than dry, filling the mouth with a smooth and lingering sweetness.

Preparation (per 8 oz cup): 2 teaspoons (2.5 g), 80 °C (175 °F), 3 ~ 4 minutes (Yunnan white tea won't get bitter with over 4 minutes steeping)
